New Year celebration is incomplete without the flavor of mouth watering delicacies. There is practice of preparing special delicacies other than the normal routine food on New Year’s Eve and the first day of the New Year. People believe that one should welcome the coming year in a special manner by a slight change in the diet menu. Presented below are recipes of few yummy and lip-smacking dishes.

Veg Rolls

Ingredients:

For Rolls:

  • Flour (Maida)
  • 3 Bowls
  • Butter Milk
  • 2 Table Spoons
  • Salt to taste
  • Oil to deep fry
  • Lukewarm water to knead dough


For Filling:

  • Cottage cheese (small rectangular pieces)
  • 1/4th Bowl
  • Cabbage (finely grated)
  • 1/4th Bowl
  • Capsicum (finely chopped into small pieces)
  • 1/4th Bowl
  • Tomato (finely chopped into small pieces)
  • 1/4th Bowl
  • Green Chillies (finely chopped into small pieces)
  • ½ Table Spoon Butter
  • Salt according to taste
  • 1 tea spoon Chilly Powder
  • 1/4th tea spoon Turmeric
  • 1/4th tea spoon Black Pepper Powder
  • 1/4th tea spoon Cumin Seeds
  • A pinch Asofoetida


Method for Filling
:

  1. Take a pan, add butter to it and heat it.
  2. Add asofoetida, cumin seeds to it.
  3. Add all vegetables to it.
  4. Add all condiments, little water and mix properly.
  5. Cook on simmer flame for 5-10 minutes.
  6. Add Cottage cheese and mix. Cook for 2 minutes.
  7. Filling is ready, keep it covered.

Method for Rolls

  1. Sieve the flour, add salt and rub in the 1 tsp oil.
  2. Knead into soft dough with Luke warm water till the dough feels firm and elastic and no longer sticky.
  3. Place dough in a deep vessel, well dusted with flour, and cover vessel with cling film or a thick damp cloth.
  4. Shape dough into small balls. Roll into flat rounds.
  5. Place filling in the center, lengthwise and cover to seal from all sides, using water to pinch and seal. Deep fry till brown and serve.

Bread Pizza

Ingredients

  • Slices of bread
  • Food Cream (well whipped)
  • Finely grated cabbage
  • Finely chopped capsicum
  • Finely chopped onions
  • Black Pepper powder
  • SaltGhee / Butter


Preparation
Mix all vegetables in cream and add salt and black pepper. Now, spread the mixture on one side of the bread.

Method

  1. Put Tawa on high flame and add a spoon of butter on it.
  2. Now put the bread with mixture on the hot tawa, in inverted position.
  3. Lower down the flame.
  4. Roast the bread properly from both the sides, till it gets crispy and brown heated.
  5. Serve hot with tomato sauce or coriander chutney.

Bread Pizza















Dal ke Vade

Ingredients

  • Bengal gram Dal 1 cup
  • Tuvar (yellow lentils) Dal 1/2 cup
  • Urad dal 1/2 cup
  • Chopped ginger - 1/2 teaspoon
  • Green chilies 3-4 nos
  • Asafetida 1 pinch
  • Curry leaves 4-5 nos
  • Red chili powder 1/4 tsp
  • Coriander powder 1/4 tsp
  • Amchur powder 1/4 tsp
  • Salt according to taste
  • Oil

Method

  1. Put Wash and soak all varieties of dals or pulses overnight.
  2. Grind to a coarse paste.
  3. Mix in all the ingredients
  4. Take a pan and heat oil in that.
  5. Take a spoon full of mixture in the tea spoon and leave in the hot oil gently.
  6. Repeat 4th step 5-6 times so that 5-6 pakoras can be prepared in one lot.
  7. Deep fry the lot in hot oil till golden brown in color.
  8. Serve hot with chutney.

Dal ke Vade
















Gazar ka Halwa

Ingredients

  • Carrots 1 kgMilk 1.5 litre
  • Cardamom seeds 1 teaspoon
  • Water 3/4 cup
  • Ghee 3 tablespoons
  • Raisins 2 tablespoons
  • Almonds 2 tablespoons
  • Pistachios 2 tablespoons
  • Sugar 450 grams


Method

  1. Wash carrots properly and grate the carrots.
  2. Soak the raisins in water for 30 minutes. Blanch and shred the nuts.
  3. Put grated carrots along with milk and water in pressure cooker.
  4. Take 10 -11 whistle and turn the flame off. Keep it as such for few minutes.
  5. Transfer the mixture into a frying pan.
  6. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.
  7. Add ghee and simmer for 2-3 minutes.
  8. Add the slightly crushed cardamoms and the raisins.
  9. Mix well and Remove from heat
  10. Garnish with almonds and pistachios and Serve ho.

Gazar ka Halwa















Amaretti

Ingredients

  • Blanched Almonds
  • 3 cups
  • Sugar
  • 1.5 cups
  • 3 Egg Whites


Method

  1. Preheat oven to 300 degrees F.
  2. Put parchment paper in the baking tray.
  3. Grind blanched almonds and mix sugar to it.
  4. Grind again and add egg whites and grind continuously to form smooth dough in food processor.
  5. Shape dough into small rounded balls.
  6. Flatten each ball and Place on to prepared baking tray.
  7. Bake to golden brown for 20 to 30 minutes in preheated oven.
  8. Allow cookies to cool completely on the paper before removing.
  9. Serve with any beverage.
